End of Summer BBQ Chicken

Get every moment you can from the summer, and let this BBQ Chicken become the star of your next gathering. It uses a simple overnight marinade to create layers of flavor in the meat. Then top it all off with your favorite sauce, or impress your guests with your very own homemade Barbecue Sauce (recipe below).

Plate of grilled bbq chicken

  • 1 pound chicken drumsticks
  • 1 pound chicken thighs
  • 2-3 cups Italian dressing
  • 2-3 cups Barbecue sauce (homemade or store-bought)

Marinate the Chicken:
Combine drumsticks and thighs in a bowl and add Italian dressing until chicken is covered. Let sit overnight (ideal) or for 3-4 hours.

Fire up a gas or charcoal grill to medium heat, put the chicken on, and cook for 20 minutes (about 10 minutes per side).

After 20 minutes, brush on your favorite BBQ sauce. Turn chicken and add more BBQ sauce. Cook for an additional 10-15 minutes. Watch closely, so you don’t burn the BBQ sauce.

Barbecue Sauce

  • 1 cup tomato ketchup
  • 1 cup tomato sauce
  • 1 cup cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon onion powder

  • 1/2 teaspoon coriander
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon ground cloves
  • 1-1/2 teaspoon ground black pepper

Mix all ingredients well and simmer for about 30 minutes, uncovered.

Great for grilling chicken, beef, or pork chops.
