Nectarine and Feta Bruschetta

It’s time to shake up the traditional cheese plate with an elegant bruschetta. Check out this recipe for a perfectly refreshing summer appetizer with a delightful mix of feta cheese and macerated nectarines!

Cook Time: 10 minutes
Ready in 30 minutes

Ingredients

  • 2 or 3 ripe nectarines
  • 2 tbsp sugar
  • 1/2 tbsp salt
  • 1 tbsp lemon juice
  • 4oz Feta cheese
  • Loaf of French bread
  • Garlic salt
  • Olive oil
  • Freshly chopped parsley and thyme, if desired

Preparation

Crustinis:
Slice French bread into 1/2″ slices.
Brush with olive oil and season with garlic salt.
Bake at 400 degrees for 10 minutes.

Bruschetta:
Combine sugar, salt, and lemon juice into a bowl.
Macerate nectarines for 15-20 minutes by gently folding into sugar mixture.
Crumble Feta into nectarines and top crustinis.
Garnish with fresh parsley and thyme, if desired.
